low density lipoprotein rich in oleic acid is protective against oxidative modification in this study they compared ldl oxidation of rabbits fed either a high oleic acid sunflower oil so that's high high monounsaturated versus a high linoleic acid oil again they didn't feed any tallow here like i wish they had but what they found was that when they fed the rabbits high amounts of linoleic acid the ldl that they pulled out at least in vitro in a test tube was much more susceptible to oxidation
