now a lot of people then ask me what about avocado oil what about olive oil in terms of olive oil olive oil is very often tainted it's very often rancid and unless you know exactly what the the lipid peroxide levels and how good the olive oil you're getting is i would avoid olive oil i would definitely not cook with it a lot of oil is actually cut with seed oils as well the same thing goes for avocado oil it's not my favorite it's much higher in linoleic acid than a tallow is going to be it's it's better than a seed oil that's going to be 20 30 40 50 linoleic acid but avocado oil and olive oil are still 12 to 20 percent linoleic acid i think it's higher than you want in your diet i would not use avocado oil again a lot of them are tainted a lot of them are rancid a lot of them are oxidized not my favorites at all
the peroxide values for routinely measured olive oils are pretty abysmal
olive oil starts to get into the realm of like the in-between oils for me avocado and Olive they both have problems with Purity and quality avocado especially in the literature there's a great article that I did a reel about on Instagram about the Purity problems with avocado oil a lot of avocado oils cut with seed oils some avocado oil is completely seed oils almost all avocado oil is much higher level of peroxide value than you'd want in your oil which is a measure of our acidity and oxidation
because those oils are also going to oxidize they're also going to degrade when you heat them in a pan Olive and avocado are not great for cooking at all
when it comes to Olive and avocado oils if you want to use these for cooking I'm not a huge fan of that
