The brain is 45% saturated fat and it is pegged hard. It your body will will take fat from anywhere and make palmitic acid because you have to have 45% saturated or the brain doesn't work. And then above that, the other 55% is a mix of three and six. And when you eat omega sixes, the ratio of six to three changes dramatically. And oh, there's some monounsaturated as well.
