You know that it's a raw cheese because it'll just say sheep's milk or cow's milk. When it's pasteurized, it actually says pasteurized on the label. So, look at this manego for instance, which is a pasteurized sheep's milk cheese. Pasteurized manega sheep's milk. Manchego cheese is great, but I like a raw cheese better. I think it digests better, probably retains some of the nutrients.”
