you wouldn't know if an oil is rancid at all and the peroxide values show it here i bet if we gave that olive oil with 20.1 milli equivalents of o2 per kilogram as the peroxide value people they wouldn't know that it's rancid they might think it has more of a buzz or more of a tingle in the tongue but i don't think you would even understand but i don't think you would even appreciate that it's a rancid oil so no you can't tell with the oil you can't tell the oil is rancid
