If, for example, when you're making a salad, you prefer the taste of safflower oil or canola oil over olive oil. Doesn't seem like you're killing yourself by doing it based on the data. Um, and you probably don't need to go to restaurants that are adamant that they exclude seed oils because if it's a good restaurant, whether it uses seed oils or not, it's probably using good ingredients otherwise and you're probably going to be just fine.
