they took the blood from these people after two hours so they're looking at what's called postprandial hypertriglyceridemia they didn't actually measure triglycerides they were just looking visually at the serum which is what you get when you spin the blood down and as you're throwing as you're suggesting when the guys ate the burrito with meat and cheese it was cloudy there was more there were more triglycerides in the blood
