if we start doing things in terms of our diet that are not evolutionarily appropriate or consistent with what we would have done or that mimic what we would have been exposed to at different regions of the globe where right certain things are not are not available saturated fats versus polyunsaturated fats then we start to look like humans preparing for hibernation or humans preparing for winter or packing on fat mass as we are prepared for a time of scarcity
