potatoes are delicious but it's a root and they actually have a pretty good amount of oxalates in them so I avoid the potatoes and I get my carbohydrates from things like the fruit or honey even sweet potatoes are decently high in oxalates so if you want to eat white potatoes or sweet potatoes cook the crap out of them if you have joint issues if you have autoimmune issues if you have sleep issues it's worthwhile considering a low oxalate diet
