so I've really enjoyed getting trimmings from the butchers and actually just getting real fat as Tommy is noting we would never have seen rendered fat or very rarely as humans so my hope is that this is a little more evolutionarily consistent way to get the fat in my diet and that it also has collagenous tissue which i think of is good it's a little chewier but I've been eating a lot of these grass-fed trimmings
