if you combine those oysters with a tortilla or wheat and how many kids eating vegan diets are getting wheat there's essentially zero amount of that zinc from one of the most highly bioavailable most highly concentrated sources of zinc that being oysters in these kids
when you combine oysters containing zinc with beans the absorption of that zinc is cut in half
what is it in the black beans it's phytic acid it's oxalates preventing the absorption of minerals
so what's the problem with phytic acid is that if you're eating oats or other grain based foods corn or beans that have high amounts of phytic acid a lot of the minerals in the foods you eat with those phytic acid containing foods are not going to be absorbed
if you eat oysters with corn like a corn tortilla in the study you don't absorb much of the Zinc at all you can see the levels of zinc in the blood only rise a little bit compared to the levels of zinc in the blood without corn if you eat the tortillas with corn or beans or and beans then you will see essentially no absorption of the zinc meaning that the phytic acid in the corn and beans completely abrogate they completely abolish the body's ability to absorb and use zinc from one of the most highly available most concentrated sources of zinc in the animal kingdom oysters
and when you give people that oyster with beans or with a tortilla that absorption of zinc is significantly lessened the levels of zinc in the blood are abrogated in fact they go to essentially zero if beans and tortillas are given together
