So, there's a backup pathway where nitrates that you get in through your diet, so typically that's going to be you know, the green leafy vegetables for the most part. If you have nitrate reducing bacteria in your saliva, that will break that down into nitrites. You swallow that, it goes into your stomach, and then if you have stomach acid, then you can make the enzymes that will make eNOS, you know, make nitric oxide from that nitrite.
