the Israeli Paradox that Israelis eat a heck of a lot of seed oils I think some of the highest amounts in the world and yet have the same or higher rates of heart disease and diabetes diabetes and obesity as other parts of the world I don't understand all of the paradoxes I've ever heard of are not paradoxes you know how can the Eskimo eat so much fat and not get heart disease well because they're not eating processed foods how can the French right like none of these paradoxes the Eskimo Paradox the French paradox none of these seem like paradoxes from an ancestral evolutionary perspective but when viewed through the lens of what is widely considered to be a quote-unquote healthy diet they're all paradoxical which is just I don't understand why people don't realize like wait maybe we just have maybe the lens maybe the whole overarching Paradigm is wrong
