I prefer personally I found that I feel much better when I eat non processed fat these are things like tallow or suet excuse me not tallow necessarily but trimmings or suet which are fat encased in connective tissue this is the fat that you would find on a ribeye a fact that you would find on a piece of bacon as opposed to drippings or rendered fat which we often call tallow the liquid fats like butter or ghee
