as associated with the rise in chronic disease as vegetable oils isn't that interesting you can see there are many other lines on this graph that I won't go into so what do we know about this diabetes is also rising which line well let's get more into me total consumption by type ah if we look at that meat line which is going up very slightly the slope of this line is pretty low what if we break that down into types of meat it's mostly poultry and no one would suggest that poultry is a bad thing because poultry is supposed to be good for us right you guys know this is kind of tongue-in-cheek in my mind because I wrote all about how red meat ruminants are fantastic poultry is great for humans too but I think red meat is some of the best meat we can eat let's look at the consumption of beef that went down that's interesting pork went down lamb and goat has been small forever and that went down further not sure what other type of meat is in the other here but poultry is the main type of meat that's gone up and yet the CDC is claiming that saturated fat is the cause of our ills when in fact most people eat poultry is pretty darn lean so isn't that strange that's very interesting and I think that this really paints a different picture here so Americans are in fact eating less saturated fat cholesterol and sodium well why is the CDC claiming otherwise I have no idea grams of saturated fat per person per day is in blue it's pretty much a flat line cholesterol going down sodium essentially going down or flat since before the 1980s so what is going on here trend in plant versus animal food consumption animal foods have stayed the same chronic disease has gone up plant foods have gone whether or not we can break this down in two types of plant foods is questionable but it certainly does not in suggest an indictment for animal foods what do we know here it is you guys American consumption of vegetable oil boom this is a pretty compelling case that this is all vegetable oils in the dark red soybean canola sunflower cotton seem PETA and others this is super important to know about which oils are going up like this look at this they're all going up with soybean being the most super bad news but all the oils going up vegetable oil is looking pretty darn guilty to me so I will leave you with this graphic here vegetable oil consumption all of them going up when in fact animal foods are not increasing saturated fat cholesterol and sodium are not increasing beef consumption is decreasing poultry is increasing but poultry has not been associated epidemiologically with the increase in problems chronic disease or other negative outcomes like red meat has but again that's related to epidemiology which we know is highly confounded diabetes is rising vegetable oil is looking pretty darn culprit like to me and I will go up to the original graph which shows these things detail what is driving chronic disease you decide not as chronic disease and those are the majority of my thoughts on all of this in the midst of coronavirus we need to consider the importance of comorbidities which seem to have a huge impact on all of this and what is driving these comorbidities what is driving chronic disease that is the question I'm asking in my book the carnivore code that is the question I'm asking in general and I think we have a pretty good answer here and it is not red meat it is vegetable oil primarily next week's podcast we'll catch you in an its gonna talk all about that love you guys are we doing good sorry it's getting dark here but stay radical and stay safe and stay healthy however you believe the best way to do that is but you know what I think

there's a clear transition in the last 100 to 110 years so oils really didn't exist before let's just say late 1800s and then introduced into the human supply chain early 1900s now along with that again this is all correlation so we have to be careful we can only draw a hypothesis from this which we must test
