So, from all angles, there's absolutely no reason to ever use a plastic cutting board. Use a wood cutting board. This is a much better option.
In contrast, when you have deep grooves in your plastic cutting board like this, bacteria hide in there. There's nothing intrinsically in the plastic cutting board that kills bacteria like there is in wood. The bacteria gets stuck in these grooves and even dishwashers, heat, sanitization, and detergents are often not effective at killing bacteria in the grooves on your plastic cutting board.
Wood draws the bacteria into the cutting board and it kills it. There's actually studies that show if you swab bacteria like lististeria on the surface of a wood cutting board and the surface of a plastic cutting board, it lives far longer on the surface of the plastic cutting board. In fact, the wood pulls the lististeria or the other bacteria into the cutting board and they're dead in 2 minutes or 3 minutes.
