what we're eating more of is poultry and i'll talk about why that's a major problem because of the way our poultry is fed today our poultry is fed corn and corn is high in linoleic acid so by eating chicken we are actually increasing the vegetable oil in our diet as well so this increase in meat is really not red meat as somebody would vilify and it's probably not an increase in saturated fat it's an increase in poultry and it's an increase in polyunsaturated fat because poultry is fed corn
