within the last 100 years they've only been able to track this since like the 1920s maybe the 1940s but essentially depending on what paper you look at you've lost 25 up to 80 percent of all vitamin and mineral content this is among apples this is broccoli this is carrots this is potatoes this is onions this is every quote produce out there it's like a minimum 20 nutrient loss
