i would say check your uric acid at baseline gradually increase your meat and organs check your uric acid if it doesn't elevate you're fine
if uric acid is going skyward as you're increasing meat and organs work on your insulin sensitivity first and gradually increase that meat but i think that insulin sensitivity will improve within time
i have worked with people in the past who have been insulin resistant and they eat meat and the they have problems or they eat processed sugar and they have problems you need to be insulin sensitive as you're working this process
