I do not include pasteurized dairy in my diet I think that once you pasturize milk and cheese it has the potential to become much more immunogenic
the problem with that is it changes the confirmation of the proteins and the milk and the cheese potentially the whey protein that can be more immunogenic for people I don't feel as good when I eat pasteurized cheese
Pasteurization is heating milk to a very high temperature. It's usually over 400° F and that changes the confirmation of proteins in the milk. There's definitely research showing that the whey protein in milk changes confirmation and that may affect humans negatively imunologically or you may lose positive imunologic benefits from a whey protein that is undenatured.
