every time we put a double bond between carbons we get a kink in the structure and the actual you know you can see this in organic chemistry textbooks and something anyone that's interested biology has learned that the more double bonds you put between the carbons the more kinks you get in the more bent the fatty acid gets and that means it can't stack as efficiently and it's going to be more they liquid at room temperature it's going to have a lower melting point than a saturated fatty acid
