linoleic acid and linoleic acid in seed oils this 18 carbon polyunsaturated fatty acid in seed oils so what's interesting for me about this this polyunsaturated fatty acid that occurs in oils from corn canola sunflower safflower etc is that this oil it seems to incorporate into our cell membranes humans have this unique physiology we're monogastric animals we have one stomach along with chickens and pigs and many other animals so in monogastric animals we don't possess the biochemistry that allows us to convert these polyunsaturated fatty acids to saturated fatty acids so all the polyunsaturated fatty acids we eat they kind of accumulate in us
