I eat raw duck egg yolks oh yeah yeah they're amazing ice creams they they're fantastic you can almost cut them with a knife they're so viscous and rich I don't eat the white raw because of this compound avidin and the white binds by it and I don't think raw chicken or duck whites are compatible but I eat the yolks raw because it tastes better that way many of the compounds and the yolk are at least partially heat labile degraded by heat and I just find it to be simple and easy
And I'll probably eat that egg yolk raw.
